Everyone is having a case of the Mondays, so this is what I am feeding them.

Salmon is good for you, really good for you. I try to serve my horde salmon at least once a week. One trick I have is to buy a huge piece and cut it in half, curing one half into gravlax (which everybody here loves), and serving the other piece for dinner (which everybody here hates**). There in lies the challenge. Salmon is a powerful fish, powerful smelling and tasting, and I have faced a lot of resistance on Salmon Night (Monday’s dinner). So I have a few tricks.
1 lb salmon*
1/2 cup ground flax
1/2 cup bran
4 tbs dried herbs (any mix will do - but avoid salt as much as you can - kay?)
*Wild salmon is the best, but I am a cheap mother, so I don’t buy wild. Also, I feel like farm raised is oddly more humane. Like wild fish are out there swimming doing their thing, being wild, and then some net drops on them, or they get stabbed with a spear or something, and the salmon is all, “WTF?” - well for the three minutes of memory they have. Everything after that is more, “Well, the quarters are a bit close, but all and all at least I’m with family” (I’m imagining the net).
Farm raised salmon has no such expectation of a peace life in the wild, so we aren’t interrupting it. Plus it’s an entitled fish, growing lazy with the 3 square meals a day, and the climate controlled, predator-free environment. And farm fishing keeps them from being fished out, and supports the economy, and did I mention is cheaper.
But I have no judgements as to what someone else would use. Salmon is, more or less, salmon. It’s really just important to eat it.
**My partner in all things, asks that I let people know, he enjoys salmon. So I’ve taken some artistic license - theater, people, theater.
